Instructions

    Steam or boil the pumpkin cubes until very soft, about 15 minutes. Drain well and mash with a fork or potato masher.

    Let the mashed pumpkin cool to room temperature.

    In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.

    In another bowl, beat the eggs, then add the milk, vanilla, and mashed pumpkin. Mix until smooth.

    Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.

    Heat oil in a large skillet over medium heat.

    Drop spoonfuls of batter into the hot oil (about 2 tbsp each). Flatten slightly with the back of the spoon.

    Fry for 2-3 minutes per side until golden brown and crispy.

Chef's Notes

Arepa di pampuna are traditionally made during pumpkin season (October–December) but are enjoyed year-round. The sweetness pairs perfectly with a cup of coffee.
